Banga Soup Is A Nigeria Soup Known As Ofe Akwu
Banga soup is one of the Eastern Nigeria most popular soup, although we have the one of the South south (Delta state) that is commonly eaten with starch or any kind of swallow. Ofe akwu is mainly eaten with rice in the Eastern part and it is very rich in protein, fat, vitamin A,E that is good for the improvement of vision, heart and brain diseases.
Here is my recipe for Ofe akwu:
- Goat meat( u can use any meat or combination of your choice)
- Akwu ( Palm fruits)
- Fresh or Dry fish
- Scent leaf
- Fresh pepper
- Grounded crayfish
- Dawadawa or okpei( dried locust bean) 2 Onions bulbs
- Seasonings
- Salt to taste
Preparation:
Cook the meat with seasonings cubes, onions, salt and allow the meat to steam until it’s soft. Add a little water not to get dried up.
Blend your fresh pepper, Dawadawa or okpei ( dried locust bean), and crayfish if it’s not yet blended and set aside.
Remove the bone of your dryfish, wash and set aside.
Wash your Palm fruits and cook for about 30 minutes, pound in a mortar and pestle then u transfer in a bowl, add warm water and extract the juice, sieve the juice from the chaff and transfer to a pot.
Place the pot of Palm extract on your cooker.
Boil the juice for about 20mins till it becomes thick.
Add the washed dry/fresh fish, cooked meat, blended crayfish, pepper and Dawadawa, your onions, seasonings cubes and salt to taste.
Then cook for another 10mins, add scent leaf and simmer for another 3mins and your delicious finger licking Ofe akwu is ready. Serve with hot white rice.
